Bad ass burger trade secrets

Loannis Benardos has hospitality in his blood. Loannis’s grandfather opened his first café in 1925 in Moss Vale and 95 years later Ioannis reopened “Bernie’s” in the same position with a meticulous Art-Deco restoration, one of the few examples of the quintessential American diner in Australia.

Loannis’ hospitality journey began at 18, in Double Bay’s Ritz Carlton Hotel and Sydney’s Four Seasons Hotel while completing his commercial pilot’s licence.
He moved to London for an FOH position at Claridge’s, Mayfair then returned to Australia for an FOH position at the newly opened Quay Grand hotel in Sydney but again had his sights set for international endeavours.
He joined the team at the Aspen Mountain Club – one of Colorado’s most exclusive skiing clubs – for the 2004/2005 ski season.

Returning to Australia, he was appointed assistant manager of the Grand National Restaurant – at the time a one hat restaurant – where he remained until he took jobs managing two high profile Sydney restaurants. A move to Canada to get married saw a switch to the vibrant Vancouver bar scene and after a ski season stint in Collingwood, Ontario back to Australia to work on the Bernie’s Diner project.

Opening Bernie’s in homage to his grandfather, Loannis has set the benchmark for revival burger projects across the country and his guest list reads like a who’s-who of the Australia’s elite food and entertainment scene – everyone wants to eat at Bernie’s.
